Have I mentioned that I love Mexican food? I don’t know what it is, it is my go-to comfort food! One thing I get tired of, however, is plain-old-tacos. I like to use these Mexican Meatballs to spice up taco night at our house! Mix some ground beef with some cheese and Mexican seasoning and then bake! Finally, top off the meatballs with some Homemade Enchilada Sauce, which adds an extra dimension to the tacos as well!

I first made these scrumptious, sauce covered burritos about 3 weeks after my daughter. I was still on the “I will get skinny immediately” bandwagon (I abandoned that notion approximately three weeks later), and these were a healthy meal I could make to satisfy my Mexican food cravings (I continued to eat like a pregnant person for about a year after I gave birth. That’s normal… right?)!
Living most of my life in Texas has made me a little food spoiled. More specifically, Mexican food spoiled! When I moved to North Dakota I knew I would have to expand my kitchen creations to include more Mexican food, and while it doesn’t quite beat eating at a hole-in-the-wall authentic Mexican hut, it does the trick for now!
Despite the bitter cold here in North Dakota (it got as cold as -45 on Sunday), I have had a fantastic week! It may be because I’m kicking my healthy eating habits back into gear!! My motivation? Both a weight loss challenge and a trip home next month! I can’t wait to experience the Texas heat (even though it will be February, it will feel very heated for me!).
