I love the holidays. My favorite part of the holidays? The potlucks! I get to eat food I wouldn’t normally make myself and I get to MAKE food I wouldn’t normally make myself! This broccoli salad is a perfect example. It’s full of mayonnaise and sugar, so it doesn’t make it to my family dinner table… [hardly] ever. BUT if I’m asked to bring a salad to a potluck, I get so excited because that means I get to make THIS!
I don’t know why broccoli salad is my go to; it wasn’t something anyone in my family made very often. I just know that every time I had it somewhere, I got seconds. Maybe even thirds! (ok, probably thirds). So one day, I decided I was going to find the perfect broccoli salad recipe. And while I did find the recipe on Pinterest (duh), it wasn’t the one I expected I would look at! There were no fancy pictures or descriptions on this pin, just a picture of a typed up recipe. There was no blog or author attached, just a link to the image. And it was everything I was looking for in a broccoli salad, but better! It was SIMPLE! With only seven ingredients, this was a recipe I was quick to get behind!
Pot Luck Broccoli Salad with Homemade Apple Cider Vinegar Dressing
3-4 bunches raw broccoli, chopped into small florets
1/2 cup red onion, finely diced
10-12 slices center cut bacon, fried crisp and crumbled
1/2 cup raisins
3/4 cup mayonnaise
1/2 cup sugar
1 tablespoon apple cider vinegar
1) Mix the broccoli, onion, bacon, and raisins in a large bowl.
2) Mix the mayonnaise, sugar, and vinegar in a small bowl.
3) Pour the dressing over the salad and mix well.
4) Let sit for 24 hours, serve cold.
