Five Ingredient Italian Chicken Bake

Spring has finally sprung here in North Dakota, which is wonderful because two years ago we were under a blizzard warning… YIKES! That being said, I’m taking advantage of this warmer weather and am finding myself wanting to be inside as little as possible (hence, the slower posting pace!). Sunday mornings are now spent looking for recipes that are going to take a minimal amount of time to prepare so my daughter and I can spend time outside!

This easy Italian Chicken Bake has five simple ingredients that delivers some amazing flavor! Some chicken, tomatoes, pesto, mozzarella, and Parmesan cheese is all you need to make this delicious entree! And, with only 10 minutes prep, you can go enjoy some time outside while it bakes 🙂

  5 Ingredient Italian Chicken Bake

Recipe adapted from The Pinning Mamma

3 boneless skinless chicken breasts, cut in half and pounded flat
3-4 tablespoons prepared pesto (store-bought or homemade)
3-4 tomatoes on the vine
3/4 cup grated Mozzarella Cheese
3 tablespoons Parmesan Cheese

1) Place the 6 pounded chicken pieces in a single layer in a ceramic 9×13 baking dish
2) Spread 1/2 tablespoon of pesto on top of each chicken breast
3) Cut the tomatoes into thin slices and lay 2-3 slices on top of each breast, or until the breast is covered
4) Sprinkle both kinds of cheese to cover the tomatoes
5) Bake at 400 degrees for 30-40 minutes or until the chicken is done and the juices run clear
6) Serve with a side of green veggies and some rice or pasta
7) Enjoy 🙂
